Green Tidings' Veggie Feast

Green Tidings' Veggie Feast
1 each: Red, yellow and orange bell peppers
1 red onion
2 portabella mushrooms
1 zucchini squash
1 yellow squash
7 purple and yellow small potatoes 
1 cube organic sprouted tofu 
Drizzle with balsamic vinegar, olive oil, sea salt (to taste)
Add freshly chopped rosemary 

Bake at 375 for 45 minutes, or when cooked to your desired texture.

Serve on its own, or with brown rice, quinoa, sprouted corn tortillas, or a side of sprouted black beans with sauteed garlic.
